Butter bean roast
225g dried butter beans
2 large onions
175g mushrooms, sliced
100g cooked rice
1 tbsp fresh parsley, chopped
1 tsp dried mixed herbs
Soak beans overnight, cook until soft 90 mins
Mash them
Slice onions finely, fry, and when browned fry the mushrooms too
Mix everything
Bake in a greased loaf tin at gas mark 5 or 190c for 30 mins or until brown on top
