World of Salads

By Rosalie Swedlin (1980)
I bought this in the second hand bookshop in Robin Hood's Bay over 12 years ago. I finally made something out of it yesterday and it was lovely. World of Salads at Amazon

Kolokthia Yiachni

Stolen from : World of Salads - Rosalie Swedlin

  • 900g courgettes
  • 2 onions, chopped
  • 450g tomatoes
  • 1 tsp sugar
  • 15g fresh dill - finely chopped
  • 10g fresh mint - finely chopped
  1. Skin the tomatoes then sieve and puree them
  2. Fry the onions
  3. Add the tomatoes and sugar and cook for 10 mins
  4. Add 150ml water and bring to the boil
  5. Top & tail the courgettes and cut into the size you want to serve them as
  6. Add them to the pan along with the herbs
  7. Cover and simmer until the courgettes are tender, 20-30 mins

The book says leave to cool but I served them still hot and they were lovely, the herbs really complement the legume.

Fresh from the Vegetarian Slow Cooker

Fresh from the Vegetarian Slow Cooker : 200 Recipes for Healthy and Hearty One-Pot Meals That Are Ready When You Are, Robin Robertson

Bit long but this a cross reference of cooker size and time taken. Maybe one day I'll type the titles too :)

Mac and Bean Florentine

Stolen from : Fresh from the Vegetarian Slow Cooker

Serves 4

  • 4.5L slow cooker
  • 250g macaroni
  • 300g cooked spinach
  • 1 onion, chopped
  • 100g raw unsalted cashews
  • 300g cooked white beans or 1 tin of same (I used Cannellini)
  • 1 tblspoon miso (optional)
  • 2 tsp lemon juice
  • 1/4 tsp dry mustard powder
  • 1/4 tsp cayenne
  • pinch ground nutmeg
  • salt
  • water
  1. Cook the macaroni to al dente
  2. Cook the onions (I boil mine, you can fry if you like)
  3. Grind cashews, add 200ml water and make a paste so it doesn't lump later
  4. Put everything in the slow cooker, give it a right good stir
  5. Cook on low for 3+ hours

I wasn't expecting much once I'd mixed it all together but the flavours come alive in the cooking. While eating it, I wanted a side salad, that would have been perfect. Only 3 stars because it didn't wow but might have done with bread, balsamic & salad.
Surprisingly unfilling

A monkey's nuts

How much do you spend to have your peanuts shelled for you ?

10kg unshelled nuts : 22.10
1k shelled nuts : 5.12

Someone on der internet says the shells are 25% by weight.

So 10kg unshelled is 7.5kg shelled : 22.10 = 2.95 per kg

400g of shelled nuts made 140g of peanut butter - the roasting dries 'em out

Tamil Nadudu

Courtesy of Madhur, via Rog - I've not tried it yet, just making a note of it

3-4 tbsp veg oil
1 tsp black mustard seeds
2 tbsp urad dal
3-4 dried hot red chillies, halved
25 fresh curry leaves
2 medium onions, peeled, quartered & finely sliced
1 tsp salt
1/2 tsp turmeric
1/2 tsp cayenne peppe
1 lb potatoes
1 medium tomato, chopped
pinch asafetida

Heat oil, add mustard seeds, urad dal & chillies. Stir until seeds pop & dal turns red. Add curry leaves. Stir. Add onions. Stir and fry until just brown at edges. Add salt, turmeric, cayenne. Stir 5 seconds. Add tatties. Stir and fry for a minute. Add tomato and asafetida, stir and fry for a minute. Add a little more than 1 cup of water, bring to boil. Cover, turn heat to medium and cook fairly vigorously for about 10 mins, until tatties just tender and water absorbed (ish). Remove cover. Stir and fry on medium low heat for 4-5 mins to get a rich reddish-yellow colour.

Brilliant Baked Beans

Another one from How It All Vegan,

300g cooked beans - pinto, kidney haricot or soy
(I started with 250g dried haricot, soaked for 12 hours, boiled for 15 mins, simmered for 1.5 hours)
350ml vegetable stock
1 tsp molasses (I used 1tbsp brown sugar)
175g tomato puree
1 small onion, chopped
1-2 cloves garlic, crushed
4 tbsp soy sauce
1 tbsp mustard powder
1 tsp cumin
1/2 tsp paprika.

Simply put everything in a baking dish, bake uncovered at 180C / Gas mark 4 for 40 mins. Makes 2-4 servings.

My twist: sieved toms not puree but be careful not too much fluid - make the stock after you've added the toms & soy sauce. Also added 1 tbsp madras curry powder.

These freeze great which is good as it's 13 hours from dried beans to eating, so make the whole 500g bag of dried beans and find some room in the freezer - defrost and fry, yummy.
